Creamy Mustard Cod with Vegetables

Ingredients:

4 cod fillets

1 onion, chopped

1 leek, sliced

2 carrots, sliced

12 cherry tomatoes, halved

200ml fresh cream

1 tbsp whole-grain mustard

A few sprigs of thyme

Salt & pepper to taste

Olive oil for cooking

Preparation:

Cook Vegetables: Heat olive oil in a pan, sauté onion, leek, and carrots until softened (about 5-7 minutes). Add cherry tomatoes and cook for another 2 minutes.

Prepare Sauce: Stir in fresh cream, mustard, thyme, salt, and pepper. Simmer for 3-4 minutes to thicken.

Cook Cod: In a separate pan, heat olive oil over medium heat. Season cod fillets with salt and pepper, then cook for 3-4 minutes on each side until golden and cooked through.

Serve: Plate the cod fillets and top with creamy vegetable sauce.
